Nghiên cứu này tập trung vào việc đánh giá tiềm năng probiotic của vi khuẩn phân lập từ hệ tiêu hóa của hàu biển Thái Bình Dương (Crassostrea gigas) nuôi tại khu vực Ninh Hòa, Khánh Hòa, Việt Nam với định hướng phát triển sản phẩm probiotic phục vụ cho giai đoạn nuôi ấu trùng hàu và nuôi lưu hàu thương phẩm.

Trong nghiên cứu này thịt hàu tươi được thu nhận từ nguyên liệu hàu sữa Thái Bình Dương (Crassostrea gigas) đã được nuôi lưu thanh lọc sinh học. Quá trình thu nhận thịt hàu được khảo sát trên các kích thước nguyên liệu khác nhau và phương pháp tách vỏ khác nhau (gia nhiệt và không gia nhiệt).
