This dissertation aims to investigate the electrical impedance properties of fruits and vegetables, and explore the relationship between impedance and quality criteria. In particular, the present dissertation outlines experimental research conducted on relationships between impedance properties and fruit tastes as well as the impedance changes observed during ripening process. Impedance measurement to monitor moisture content changes in the progress of drying is also included in this research.

Land resources potential assessment is a valuable method for orienting land use planning in the world as well as in Vietnam. This study aimed to (1) assess land suitability and (2) orient the effective use of agricultural land in the study area. Results indicated that Ham Thuan Bac had 107 land mapping units (LMUs) with 11 main landuse types (LUTs) such as rice, cassava, vegetables, dragon fruit, and other trees. Agricultural land with high (S1) and moderate suitability (S2) for most LUTs was small; however, marginal (S3) and not suitability (N) lands were quite large.

The development of fruits without fertilization is known as parthenocarpy. Parthenocarpy improves the fruit quality, processing attributes, production and productivity of vegetable crops like tomato, cucumber, watermelon etc. Absence of seeds can enhances the shelf life of the fruits, allowing a better conservation, fruit set in adverse climatic conditions, early and offseason production of vegetable crops. In 2003, Vietnam exported US$43 million of high value fruit to high-income countries and imported US$14 million of fruit and vegetables.
