In Vietnam, a tea-producing country, the tea buds and top three leaves are normally used for tea production while older leaves are pruned and discarded as agricultural waste in the winter. The present study aimed to exploit catechins from pruned tea leaves and use them as natural antioxidants for applications in the food industry.

Fatty acids are an important energy source, for they yield over twice as much energy as an equal mass of carbohydrate or protein. In humans, the primary dietary source of fatty acids is triacylglycerols. This lecture will describe the metabolism of fatty acids. The two main components of fatty acid metabolism are β oxidation and fatty acid synthesis. Upon completion of this lecture, you will understand that the fatty-acid breakdown reactions of β oxidation result in the formation of reduced cofactors and acetyl-CoA molecules, which can be further catabolized to release free energy.

A Total 8 semen sample from four healthy Gir breeding bulls were collected at weekly interval for two weeks period using of artificial vagina method for evaluation of semen biochemical attributes at various stages of cryopreservation of Gir bull semen. The overall mean values for oxidative stress parameters viz. lipid peroxidation and glutathione reductase were 51.14 ± 0.18 μmol/ml and 32.24 ± 0.64 U/L, respectively in neat semen samples.

Glyoxal is a key compound involved in glyoxal oxidase (GLOX)-dependent production of glyoxylate, oxalate and H2O2 by lignin-degrading basidiomycetes. In this paper, we report that glyoxal was produced from a metabolite of ligninolytic fungi, linoleic acid, by manganese peroxidase (MnP)-dependent lipid peroxidation. Glycosphingolipids (GSLs) were purified from adults and plerocercoids of the tapeworm Diphyllobothrium hottai, and their chemical structures were determined. Total lipid fractions prepared from chloroform/methanol extracts of whole tissues were fractionated successively on ion-exchange chromatography, silicic acid column chromatography, and preparative TLC. The purified GSLs were characterized by methylation analysis, TLC-immunostaining, liquid secondary ion MS, MALDI-TOF MS, and 1H-NMR.

Lipoprotein lipase (LPL) plays a key role in lipid metabo-lism. Molecular modeling of dimeric LPL was carried out usingINSIGHT IIbased upon the crystal structures of human, porcine, and horse pancreatic lipase. The dimeric model reveals a saddle-shaped structure and the key heparin-binding residues in the amino-terminal domain located on the top of this saddle.

The activity of m-calpain, a heterodimeric, Ca 2+ -dependent cysteine protease appears to be modulated by membrane interactions involving oblique-orientated a-helix formation by a segment, GTAMRILGGVI, in the protein’s smaller subunit. Reactive oxygen species (ROS) are products of normal metabolic activities and are thought to be the cause of many diseases. A selenium-containing single-chain abzyme 2F3 (Se-2F3-scFv) that imitates glutathione peroxidase has been produced which has the capacity to remove ROS. To evaluate the antioxidant ability of Se-2F3-scFv, we con-structeda ferrous sulfate/ascorbate (Vc/Fe 2+ )-inducedmito-chondrial damage model system and investigated the capacity of Se-2F3-scFv to protect mitochondria from oxi-dative damage.

Lactoferrin (LF) is a Fe 3+ -binding glycoprotein, first recognized in milk and then in other human epithelial secretions and barrier fluids. Ceramide is a lipid second messenger that acts on mul-tiple-target enzymes, some of which are involved in other signal-transduction systems. We have previously demon-strated that endogenous ceramide modifies the metabolism of brain ethanolamine plasmalogens. The mechanism involved was studied. On the basis of measurements of breakdown products, specific inhibitor effects, and previ-ous findings, we suggest that a plasmalogen-selective phospholipase A2 is the ceramide target.

Oxysterol binding protein (OSBP) and its homologs have been shown to regulate lipid metabolism and vesicular transport. However, the exact molecular function of individual OSBP homologs remains uncharacterized. Here we demonstrate that the yeast OSBP homolog, Osh6p, bound phos-phatidic acid and phosphoinositides via its N-terminal half containing the conserved OSBP-related domain (ORD).
