Selection of food products

The present researchaimed to investigate the morphological, biochemical and genotypic characterization of dominant lactic acid bacteria that were isolated from traditional dairy products in Iranian tribes . A total of 75 samples of traditional yogurt, doogh from dairy units in Fars province were randomly collected. Isolation of lactic acid bacteria, biochemical and genotypic identification were conducted. Totally, 157 LAB isolates were selected.

Sweet sorghum is a new generation bio-energy crop with considerable tolerance to drought and salinity and amenable for multiple uses. Pest control practices in the vegetable crops have been heavily dominated by the routine use of broad-spectrum insecticides to control pests. Concerns have emerged about the adverse consequences of over use of pesticide. These consequences include short and longterm health hazards, contamination and environmental degradation. To minimize the pest losses farmers heavily depend on the chemical pesticides and accessing pest management information from the pesticide dealers due to weak state extension support system.

We study the enzymatic hydrolysis of lactose by a commercial enzyme from a selected strain of Kluyveromyces fragilis. The variables analyzed were: temperature (25–40 ◦C), enzyme concentration (0.1–3.0 g l−1), lactose concentration (0.0278–0.208 M), and initial galactose concentration (0.0347 M). On the basis of the data analyzed, both published and in the present work, we propose a Michaelis–Menten kinetic model with inhibition by the product (galactose), which reveals that the substrate (lactose) and the product (galactose) present similar affinity for the active site of the enzyme.
